It might be the middle of summer, but harvests of winter squash have already started! Butternut squash are referred to as "winter squash" because their hard outer shell allows them to keep well
into the winter months. Their sweet, creamy flesh is a welcome addition to
curries, pasta, soups, salads. Butternut squash are also great roasted and eaten on their own!
