Forbidden Rice and Blueberry Salad


Black rice, also known as "Forbidden Rice" or "Emporer's Rice" was originally cultivated in Ancient China. Legend tells us that is was once eaten exclusively by Chinese Emporers. The rice itself is much more nutritious than bleached white rice, it has an earthy, nutty flavor. It goes beautifully in this bright, side salad with tangy, nutty flavors. The ingredients come together in a balanced dish that is a nice change of pace from traditional summer salads. Itís perfect with roast chicken, fish, or pork.
