Spicy Sweet Potato Noodle Soup

A spicy Indian-inspired stew with citrus notes. Onions are sautéed in coconut oil with spices (turmeric, ginger, cinnamon, nutmeg, caraway seeds, paprika), then simmered in a tomato broth, along with lemon slices, chickpeas and lentils. Spiralized sweet potato “noodles” are added, along with fresh spinach and cilantro, toward the end of cooking. Mild in heat, but plenty of ethnic spice flavor! Serve with a side of flatbread or over rice.
