Cherry Tomato Caprese Poppers

Ingredients:
Cherry tomatoes
Fresh mozzarella cheese
Fresh basil leaves
Extra virgin olive oil
Balsamic vinegar

Method:
This is a "party popper" version of the classic Caprese salad - great finger food. Slice cherry tomatoes in half. Top with an appropriately-sized slice or cube of mozzarella and a piece of fresh basil. Drizzle with a few drops of olive oil and vinegar - enough for flavor, but not enough to make them drippy. Fill up a plate and watch them disappear!
